Polenta with pesto and sun dried tomatoes

Recipe:

I used mushroom/onion polenta sliced

Fry in a small amount of olive oil until golden brown

Soak sun dried tomatoes in warm water until soft.

Chop tomatoes in small pieces.

I used prepared vegan garlic pesto but I usually make my own in summer. Heat throughly.
Place polenta on plate. Drizzle pesto over, place tomatoes on and around polenta. I also put diced black olives on top.

The Lake

The Lake

What a serene and beautiful place to live. This is truly paradise. We moved here 8 years ago and it seems just like it was yesterday. We have such wonderful neighbors and many friends. During the summer, we dance in the park where they have concerts. There are festivals galore and quite a few restaurants on the lake where you can arrive by boat.

I found Molly at a yard sale. We think she was abused as she is very skiddish and cowers when you move quickly. She is such a sweetheart. No trouble at all. She just wants to be held and loved. Don’t we all?

20130328-104120.jpgI had a wonderful span of 10 years when I modeled.  I was fortunate enough to live in Los Angeles, NYC, Milan and Melbourne, Australia.  I traveled all through Europe and was able to have my daughter with me.  Those days and experiences will forever be in my heart.  Great times!

Tortilla soup

Ingredients:

1 onion diced
1 jalapeño pepper, seeded and diced
6 cloves of garlic diced
2 tablespoons of cumin
6 tortillas sliced in strips
1 28oz can of tomatoes
6 cups of vegan chicken broth
Salt and pepper

Sauté onion and garlic until transparent. Add tortilla strips. Cook just a minute. Add jalapeño and cumin.
Add tomatoes and broth.
Cook until tender.
Transfer to blender. Blend thoroughly. Add salt and pepper to taste.
Serve with cilantro, crushed tortilla chips and diced onion.
